There are five interviews in our series and we’re so excited to share them all with you, each offering different nuggets of insight on marketing, brand development, and how to go the distance, even when things get tough -- like, say, a global pandemic.
First on the docket, our interview with Blair Lebsack, the chef behind the beloved Edmonton restaurant RNG RD. Blair was eager to talk about ‘The Butchery’, their latest endeavour, the philosophy behind using the whole animal, and how the power of local-sourcing has strengthened their brand within the community.
We must admit, there were a few nerves going into this interview. After all, we sort-of fancy ourselves behind-the-scenes kind of gals. But Blair was the perfect choice to start off our series.
Blair has a warm presence and speaks from the heart. He’s the kind of guy you could easily get caught up in conversation with. Especially if you got him started on a specific cut of meat or local vendor.
After our interview, we took a tour through The Butchery, a space that was surprisingly cozy for a butcher shop. Blair explained each design choice, and it was immediately clear that the homey feeling was intentional.
Blair said the goal was always to have his customers stop in on the weekend, grab a glass of wine or craft beer and relax while their cuts of meat were being prepared. With such a beautiful space, we can see how it would be hard to say no.
